Cassava Flour Waffles with Cinnamon Apples & Beet Yogurt

Is it Breakfast? Is it Dessert? It is BOTH... This super interesting combination of Cassava Waffles topped with Cinnamon Apples and Beetroot Yogurt will satisfy your taste buds and make your belly happy too!!
Go ahead and treat yourself and your family with this amazing recipe!
Makes 4 large waffles
What you would need:-
1 cup Rootalive Cassava Flour
1 tablespoon baking powder
1/4 teaspoon salt
1 cup Rootalive Coconut Milk
2 eggs
1/4 cup melted Rootalive Coconut Oil
1 tablespoon maple syrup or coconut sugar
Preheat a waffle iron.
Whisk the dry ingredients together in a bowl.
Whisk the wet ingredients together in a separate bowl and add to the dry.
Stir to fully combine.
When the waffle iron is hot, grease it, divide the batter into 4 and pour into the iron.
Cook for about 6 minutes. The waffles will be golden brown.
Cinnamon Apples
What you would need:-
1 teaspoon Rootalive Coconut Oil
1 large apple, cored and sliced
2 teaspoons maple syrup
1/2 teaspoon Rootalive Ceylon Cinnamon Powder
Heat the oil in a frying pan over medium heat on the stove.
Add the apple, maple and cinnamon and sauté for 4-6 minutes until the apples are softened and cooked.
Spoon over the waffles.
Beet Yogurt
What you would need:-
1/2 cup plain yogurt of choice
Rootalive Beetroot Powder, to achieve desired shade of pink
Stir the beet powder into the yogurt, adding enough to get the shade of pink you like.
Spoon a dollop on the waffles before serving.
