Cozy Apple Strudel Muffins

You will need:
1/2 cup unsweetened almond milk or other preferred milk
1/2 teaspoon vinegar
2 large eggs
1/2 cup unsweetened applesauce
1/2 cup organic sugar
1 teaspoon pure vanilla extract
2 cups pancake mix of your choice
2 teaspoons baking powder
1 tablespoon Rootalive Ceylon cinnamon powder
1/4 teaspoon allspice
1/8 teaspoon cloves
1/2 teaspoon salt
1/2 cup grated apple (1 apple)
Directions:
Preheat oven to 425 F.
Add almond milk & vinegar to a bowl to make buttermilk and set aside.
Grate one apple
Using a medium bowl, beat eggs and add in the remaining wet ingredients (applesauce, vanilla, buttermilk mixture).
Mix all dry ingredients together in a separate bowl ( pancake mix, baking powder, cinnamon, sugar, all spice)
Mix the wet and dry ingredients together until well combined.
Spray muffin tin and pour mixture ¾ of the way.
Optional crumble topping
Measure out ¼ cup oats and mix with ¼ cup date sugar. In the same bowl, add 1 tbsp melted coconut oil, 1 tsp cinnamon and a pinch of salt. Top each muffin with crumble and begin to cook muffins on high at 425F for 4 minutes to allow the crumble to stick and hold. Lower the temperature to 375 F and bake for 10-12 minutes.
Serve with a scoop of vanilla ice-cream.
