Vegan , Gluten Free (NO-Fry) Mini Donuts

These mini donuts will leave all ages asking for more!! They are Vegan, Gluten Free and best of all NO FRY! Created by our very own @lexyruns


DONUT BATTER


¼ cup Rootalive Cacao Powder

2 cups gluten free flour

1½ cups of sugar

2 tsp baking powder

1 tsp salt

1 tbsp flaxseed + 2.5 tbsp water (egg substitute)

1¼ cups oat milk

2 tablespoons Rootalive Coconut Oil

1 tablespoon vegetable oil

1½ teaspoons vanilla


GLAZE


  • 4 cups confectioner's sugar
  • 2 tsp vanilla extract
  • 4 tbsp hot water


DIRECTIONS


  • Preheat the oven to 350 degrees
  • Sift dry ingredients together in a large bowl
  • Whisk wet ingredients together in a small bowl
  • Stir the wet mixture into the dry ingredients
  • Spoon the batter into greased baking pans, filling 3/4 full
  • Bake for 20min (or until a toothpick comes out clean)
  • Glaze donuts as desired, I used 1 coat of glaze
